Tomato and Goat Cheese Salad

Ingredients

  • 4-5 medium tomatoes
  • 50 grams goat Cheese
  • 6-8 green olives
  • A few black olives, sliced into roundels

For Dressing

  • 4 tablespoons olive oil
  • 12-15 fresh mint leaves + for garnishing 
  • 4-5 pickled jalapeno slices
  • 2 teaspoons lemon juice
  • Salt to taste
  • 1 teaspoon mustard powder

Method

  1. Slice tomatoes into roundels and arrange them on a serving platter each roundel overlapping the other.
  2. Soak goat’s cheese in warm hot for some time so that the saltiness reduces. Crumble goat cheese and sprinkle over tomatoes.
  3. For dressing, put olive oil in a blender jar, add mint leaves, jalapenos, lemon juice, salt and mustard powder and blend well.
  4. Add green and black olives to the tomatoes in the serving plate, pour the dressing on top, garnish with mint leaves and serve immediately.
