Ingredients list for Green Pea and Goat Cheese Risotto
- 1 cup Fresh green peas puree
- 2 tablespo for garnish Goat cheese
- 1 1/2 cups Risotto rice
- 4 tablespoons Olive oil
- 3 tablespoons Garlic chopped
- 1 Medium onion finely chopped
- 4-6 tablespoons White wine
- 6 cups Vegetable stock
- 2 tablespoons Fresh cream
- 2 tablespoons Butter
- for garnish Micro greens
Method
- Heat olive oil in a deep non-stick pan, add garlic and onion, and sauté till translucent.
- Add rice, mix and sauté for 2 minutes. Add white wine and mix well.

Add vegetable stock and salt and mix well. Cook for 4-5 minutes or till the moisture is almost absorbed, stirring occasionally. - Add green peas puree and mix well. Cook for 10-12 minutes or till the rice is cooked.
- Add fresh cream, butter and goat cheese, mix well and cook for 1 minute.
- Transfer into a serving bowl, garnish with goat cheese and micro greens and serve hot.
