Ingredients list for Tomato, Coconut mix Chutney

  • 2 medium Tomato diced
  • 1/4 cup Coconut grated
  • 1 teaspoon Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, crushed
  • 2 Whole dry red chillies
  • 1/3 cup coriander leaves, chopped
  • to taste Salt

Method

  1. Heat oil in a non stick pan. Add garlic and whole red chillies, saute well for half a minute.
  2. Add onions and saute till soft. Add tomatoes and salt. Mix well and cook for five minutes till tomatoes are soft.
  3. Add coconut and coriander leaves. Mix well. Saute for five minutes. Remove from heat. Allow it to cool and blend in the blender till smooth.
