Ingredients
- 1 tablespoon red thai curry paste
- 4 mini pizza bases
- Grated mozzarella cheese as required
- 1 tablespoon olive oil
- 1 teaspoon finely chopped garlic
- ½ teaspoon finely chopped ginger
- 1 small onion, finely chopped
- 10-12 button mushrooms, sliced
- Salt to taste
- 2 tablespoons freshly chopped coriander leaves
- Coriander leaves for garnish
Method
- Heat oil in a non-stick pan, add garlic, ginger, and sauté well. Add onion and sauté well. Cook till translucent.
- Add red thai curry paste and mix well. Cook for 1-2 minutes. Add mushrooms, salt and mix well. Cook for 6-8 minutes, sautéing occasionally.
- Add chopped coriander and mix well. Cook for 1 minute and take it off the heat.
- Place the pizza bases on the baking tray, sprinkle a portion of the grated mozzarella cheese on each and place a portion of the prepared mixture.
- Sprinkle a little cheese on top and place it in oven. Bake till the cheese melts.
- Garnish with coriander leaves and serve hot.
