Ingredients list for Thai Green Curry Chicken Rice

  • 300 grams Boneless chicken , cut into 2 inch pieces
  • 2 1/2 tablespoons Thai green paste
  • 1 1/2 cups Jasmine rice
  • 1 tablespoon OIl
  • 5-6 Button mushrooms
  • 1 Fresh Thai red chilli
  • 2 cups Chicken stock
  • to taste Salt
  • 6-8 Broccoli florets
  • 2 teaspoons Palm sugar
  • 1 cup Coconut milk
  • 1 Lemon
  • to serve Fresh Thai basil sprig

Method

  1. Heat oil in a non-stick pan, add Thai green curry paste, and sauté well.
  2. Add chicken and mix well. Slice button mushrooms and add and mix.
  3. Add fresh red chilli and mix well. Saute for 4-5 minutes.
  4. Add rice and mix well. Add chicken stock, mix well. Add salt, mix well, cover and cook for 4-5 minutes.
  5. Take the lid off and add broccoli and palm sugar and mix well. Add coconut milk and mix well. Cover and cook till chicken and rice are cooked completely.
  6. Transfer into a serving plate. Cut lemon into slices. Garnish the rice with lemon slices and Thai basil sprig and serve hot.
