Ingredients list for Thai Fragrant Rice
- 1 cup Thai Jasmine Rice
- Spring Onion
- 1 cup Spring onions with greens
- 2 cups Coconut milk
- 1 teaspoon Lemon rind grated
- 1 inch Lemon grass roots
- 1 inch piece Ginger
- to taste Salt
Method
- Trim the spring onion greens and reserve. Roughly chop the stems and quarter the bulbs.
- Heat a deep non stick pan, add the drained rice, coconut milk, spring onion bulbs and stems, vegetable stock and lemon rind.
- Slice lemongrass root and add. Slice ginger and add. Add salt and mix. Cook till the rice is done. Chop spring onion greens and garnish the rice.
- Serve hot.
