Ingredients list for Thai Fragrant Rice
- 1 1/2 cups Brown Rice soaked for an hour
- 2 inches Lemongrass stalk
- 1 tablespoon Oil
- 1 Lemon
- 1 tablespoon Ginger grated
- 4 Red bird’s eye chillies
- to taste Salt
- 3 1/2 cups Vegetable stock
- 1 Lime leaf
Method
- Roughly chop lemongrass.
- Heat oil in a deep non-stick pan and add lemongrass.
- Grate the rind of 1 lemon.
- Add ginger to the pan and sauté till fragrant. Add rice and mix well. Add lemon rind and mix again.
- Roughly chop bird’s eye chillies with stem intact and add to the pan. Add salt, vegetable stock and lime leaf and mix well. When the mixture comes to a boil, reduce heat, cover and cook till the rice is fully done.
- Transfer into a serving bowl and serve hot.
