Ingredients list for Thai Chicken Mango Curry-Cook Smart
- 450 grams Chicken cut into bite sized pieces on the bone
- 1 Ripe mango
- 1 tablespoon Oil
- 1 1/2 tablespoons Thai red curry paste
- 1 Medium onion finely chopped
- 1 inch Ginger
- 12-16 Button mushrooms sliced
- 1 cup Sweet potato stock
- 1 tablespoon Brown sugar
- 1 1/2 teaspoons Fish sauce
- 1/2 cup Coconut milk
- 8-10 Fresh basil leaves
Method
- Peel mango.
- Heat oil in a non-stick pan. Add red curry paste and saute. Add onion and saute well.
- Roughly chop ginger and add, mix and saute well.
- Add mushrooms, mix and cook on high heat.
- Add chicken pieces and mix well. Add sweet potato stock, mix, cover and cook for 10 minutes.
- Slice peeled mango.
- Add brown sugar, fish sauce and coconut milk, reduce heat and mix well.
- Add basil leaves and mango slices and mix well. Cover and cook on low heat till the chicken is cooked.
- Serve hot.
