Sweet and Sour Cabbage

Ingredients 

  • 1 small red cabbage, shredded
  • 1 tablespoon brown sugar/jaggery
  • ¼ cup vinegar
  • 2 tablespoons + 1 teaspoon butter  + for garnishing
  • 1 medium onion, sliced
  • 1 medium apple
  • ½ cup red wine
  • Salt to taste
  • A pinch of black pepper powder

Method

  1. Heat 2 tablespoons butter in a non-stick pan. Add onion and sauté till it turns soft.
  2. Grate apple and put in a bowl.
  3. Add cabbage to the pan, mix and cook for 1-2 minutes.
  4. Add grated apple and mix well. Add brown sugar and mix well. Add wine and mix well.
  5. Add salt, pepper powder and mix well. Add ¼ cup water, ¼ cup vinegar, mix well and braise for 20-30 minutes.
  6. Switch off heat and add 1 teaspoon butter and splash of vinegar. Mix well.
  7. Garnish with a dollop of butter and serve as an accompaniment.
