Ingredients list for Sweet Rice in Banana Leaf
- 1 cup Cooked Rice
- 1 Scraped Fresh Coconut cut into 4 pieces
- 2 tablespoons Ghee
- 3 tablespoons Raisins
- 3/4 cup Scraped coconut
- 1/2 cup Brown sugar
- 1/4 cup Coconut milk
- 1/4 teaspoon Green cardamom powder
- 1 teaspoon Oil
Method
- Heat ghee in a non-stick pan, add raisins and sauté till lightly browned.
- Put rice in a bowl, add sautéed raisins and mix well.
- Heat the same pan, add coconut, brown sugar and coconut milk and mix well. Cook for 3-5 minutes. Add this mixture to the rice and mix well. Add cardamom powder and mix well.
- Discard the veins of banana leaves, halve lengthwise and soften by placing on direct flame.
- Place a portion of the rice mixture on one side of each leaf and wrap to make a packet.
- Heat oil in a non-stick pan, place the packets on it and cook till the underside is browned, flip and cook on the other side too.
- Place them on a serving plate, unwrap one of the packets and serve immediately.
