How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Sweet Rice in Banana Leaf Recipe

  • Cooked Rice 1 cup

  • Scraped Fresh Coconut cut into 4 pieces 1

  • Ghee 2 tablespoons

  • Raisins 3 tablespoons

  • Scraped coconut 3/4 cup

  • Brown sugar 1/2 cup

  • Coconut milk 1/4 cup

  • Green cardamom powder 1/4 teaspoon

  • Oil 1 teaspoon


Step 1

Heat ghee in a non-stick pan, add raisins and sauté till lightly browned.

Step 2

Put rice in a bowl, add sautéed raisins and mix well.

Step 3

Heat the same pan, add coconut, brown sugar and coconut milk and mix well. Cook for 3-5 minutes. Add this mixture to the rice and mix well. Add cardamom powder and mix well.

Step 4

Discard the veins of banana leaves, halve lengthwise and soften by placing on direct flame.

Step 5

Place a portion of the rice mixture on one side of each leaf and wrap to make a packet.

Step 6

Heat oil in a non-stick pan, place the packets on it and cook till the underside is browned, flip and cook on the other side too.

Step 7

Place them on a serving plate, unwrap one of the packets and serve immediately.
