Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Sweet Potato Kheer Recipe

  • Sweet potatoes grated and soaked in water 3 medium

  • Milk 5 cups

  • Ghee 1 tablespoon

  • Rose petals 1 tablespoon

  • Green cardamom powder 1/2 teaspoon

  • Sugar to taste

  • Rose syrup 2 tablespoons

Method

Step 1

Heat ghee in a pan.

Step 2

Add sweet potatoes and sauté for two to three minutes. Add milk and cook. As the sweet potato gets cooked the milk will thicken. Add half the rose petals and green cardamom powder and stir and cook till the mixture thickens slightly. Add sugar and stir and cook till you get the desired consistency.

Step 3

Set aside to cool and place in the refrigerator to chill.

Step 4

Pour into serving bowls, brush the top with rose syrup, sprinkle the remaining rose petals and serve.
