This recipe is from FoodFood TV channel By Sanjeev Kapoor 15 Aug 2014 in Recipes Course New Update Main Ingredients Onion, Mushrooms Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Stuffed Onion Rings 3-4 medium Onion 2 tablespo Mushrooms 1/2 teaspoon Cumin seeds 1 Green chilli sambal seeded and chopped 2-3 medium Mushrooms chopped 50 grams Paneer (cottage cheese) grated 1 medium Potatoes boiled peeled and mashed 1/2 Red capsicum chopped 5 teaspoons Refined flour (maida) to taste Salt 1 tablespoon Fresh coriander leaves 1 teaspoon Garlic Powder 1 cup Fresh brown bread crumbs lightly roasted 1 teaspoon Cornflour/ corn starch Method Cut the onions into thick rings and separate the layers. Keep the rings that are cup shaped aside and chop the rest. Heat a non stick pan on medium heat, add the oil and cumin seeds. When they begin to change colour, add the green chilli, chopped onions and sauté for one to two minutes. Add the mushrooms and sauté for a minute. Add the paneer and continue to sauté. Add the potato, red capsicum and mix well. Add one teaspoon refined flour and mix well. Add salt and coriander leaves and mix. Cook till dry and set aside to cool a little. Add the garlic powder to the breadcrumbs along with salt and mix. Take the remaining refined flour in a bowl, add the cornflour and a little salt. Add sufficient water to make a smooth and thin batter. Heat sufficient oil in a kadai on medium heat. Stuff the onion cups with the stuffing mixture and press well. Dip them in the flour batter and roll in the breadcrumbs. Gently slide into the oil and deep fry till golden and crisp. Drain on absorbent paper and serve hot with date and tamarind chutney.
