Ingredients list for Stuffed Cheese Rolls
- as required Mozzarella cheese
- + for dusting Refined flour (maida) 2 cups
- 1 tablespoon Fresh yeast
- 2 teaspoon Sugar
- for greasing Butter 1 tablespoon +
- a pinch Salt
- ½ cup Milk powder
- 6-8 Parsley sprigs
- 5-6 Garlic cloves
- Milk for brushing
Method
- Put yeast in a small bowl, add some water and 1 teaspoon castor sugar and mix well. Heat in microwave for 10 seconds. Set aside for 1-2 minutes or till the yeast gets activated.
- Sieve flour into a bowl. Add salt, remaining sugar and milk powder and mix well. Make a well in the centre and add the activated yeast and mix well. Add water gradually and knead into a soft dough.
- Dust the worktop with some flour, place the dough and stretch.
- Dust the same bowl with some flour, put the dough into it, cover with damp muslin cloth and set aside to prove for 15-20 minutes.
- Dust the worktop with some flour, place the dough on it and knock back to remove all the air. Add 1 tablespoon butter and knead again. Put the dough back into the bowl and set aside.
- Roughly chop parsley. Grate some cheese over it and mix well.
- Weigh the dough and divide into 8 equal portions.
- Take each portion in your palms, create a cavity, fill in some cheese-parsley mixture, bring the edges together, seal the edges and shape into a ball. Ensure that the balls are smooth with no cracks on the surface.
- Grease a baking tray with some butter and dust with some flour.
- Place the stuffed cheese rolls in the greased tray, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
- Preheat oven to 180ºC.
- Finely chop garlic cloves.
- Brush some milk over the balls and sprinkle chopped garlic. Place the baking tray in the preheated oven and bake for 10-15 minutes.
- Brush some butter on the cheese rolls and let them cool slightly before serving.
