Ingredients list for Strawberry Pancake Stacks

  • 5-6 Fresh strawberries
  • 1/2 cup Refined flour (maida)
  • 1 Egg
  • 1 teaspoon Vanilla essence
  • 3 tablespoons Castor sugar
  • 1/2 teaspoon Baking powder
  • 1/4 cup Milk
  • 2 tablespoons Melted butter
  • for drizzling Chocolate sauce
  • for dusting Icing sugar

Method

  1. Break egg and put into a bowl and whisk well. Add vanilla essence and whisk. Add castor sugar and mix well.
  2. Sift together flour and baking powder into the egg mixture and whisk well. Add milk and whisk. Add butter and mix.
  3. Heat a non-stick tawa. Pour a little mixture with a ladle on it, spread into mini pancake and cook, turning sides, till evenly done on both sides.
  4. Hull 4 strawberries and cut them into thick slices. Halve the remaining.
  5. Transfer cooked pancakes on the worktop. Place a strawberry slice on a pancake and cover with another pancake. Place one more strawberry slice on top and secure with a wooden fork. Similarly, prepare more stacks.
  6. Arrange the stacks on a serving platter, drizzle chocolate sauce on top and dust some icing sugar.
  7. Garnish with halved strawberry and serve.
