Ingredients list for Strawberry Cheesecake
- 1 1/2 cups Graham cracker crumbs
- 3-4 tablespoons Butter melted
- 1 tablespoon Castor sugar
- 1 pinch Salt
- 1 cup Fresh strawberry sauce
- to garnish Fresh strawberry slices
- Cheesecake filling
- 1 cup Cream cheese at room temperture
- 2/3 cup Castor sugar
- 1 1/2 cups Mascarpone cheese
- 1 teaspoon Vanilla extract
- 1 teaspoon Lemon juice
- 1 pinch Salt
- 1 1/2 cups Whipped cream
Method
- Take Graham cracker crumbs in a bowl, add melted butter and mix. Add 1 tbsp castor sugar and salt and continue to mix till the mixture resembles wet sand.
- Take cream cheese in another bowl, add sugar, mix till well combined. Beat the mascarpone cheese in a small bowl till smooth. Add it to the cream cheese mixture and fold in gently.
- Add vanilla extract, lemon juice and mix well. Add a pinch of salt and mix well.
- Add some whipped cream and fold in gently. Add the remaining whipped cream and fold in well. Refrigerate for 5-10 minutes.
- To make instant cheesecake, put some of crumb mixture into each stemmed serving glass and press gently. Add dollops of cream cheese mixture and top it with sliced strawberries. Drizzle a little fresh strawberry sauce on top. Sprinkle some crumb mixture on top and serve.
- For a classic cheesecake, put the crumb mixture into a spring form cake tin, spread it evenly and press down firmly. Keep the tin in the refrigerator for 10-15 minutes.
- Add some fresh strawberry sauce into the cream cheese mixture and mix well. Pour it over the crumb mixture in the cake tin and spread it evenly. Refrigerate till set.
- Demould and keep it on a plate. Cut into wedges and keep them on serving plates, drizzle a little strawberry sauce on top and serve immediately.
