Ingredients list for Sprouted Moong Khichdi
- 1 1/2 cups Sprouted Green gram
- 1 cup Rice
- 1 teaspoon Pure ghee
- 1 teaspoon Cumin seeds
- 1 inch stick Cinnamon
- 1/2 teaspoon Turmeric powder
- 1/2 tablespoon Black peppercorns crushed
- 3-4 Green chillies slit
- 2 medium Carrots 1 inch pieces
- 1 small Cauliflower cut into florets
- to taste Salt
Method
- Heat ghee in a non stick pan and add cumin seeds. Stir-fry over high heat till they change colour.
- Add cinnamon, turmeric powder, crushed peppercorns and green chillies and stir-fry for a while. Add the carrots and cauliflower and mix well.
- Drain and add the soaked rice and salt to taste, stir briefly and add two and half cups of water. Bring the rice to a rapid boil, add the sprouted moong, reduce heat and simmer for fifteen to twenty minutes, stirring frequently or until the rice is lightly mashed and completely cooked. Serve hot.
