Ingredients

  • 2 bunches spring onion greens 
  • 1 medium sized onion 
  • 1 green chilli
  • 4-5 garlic cloves
  • 1 inch piece ginger
  • 1½ tablespoons butter
  • ½ teaspoon cumin seeds  
  • 1 bay leaf 
  • Salt to taste
  • 1 tablespoon cream

Method

  1. Wash and finely chop spring onion greens.
  2. Peel, wash and finely chop onion. Remove stems, wash and finely chop green chilli.  Peel and wash garlic and ginger. Grind green chilli, garlic and ginger to make a paste.
  3. Heat butter in a pan, add cumin seeds and bay leaf and stir-fry for half a minute. Add chopped onion and sauté till onion turns light pink. Add ground paste and sauté for a minute.
  4. Add spring onion greens and cook for five more minutes stirring continuously. Add three cups of water and bring to a boil.
  5. Remove off the heat and cool thoroughly. Discard the bay leaf and puree the mixture in a food processor.
  6. Strain it and bring it back to the heat cook further for five minutes and season it with salt. 
  7. Stir in fresh cream and serve hot.
