Ingredients list for Spinach and Cheese Fritters
- 1 medium bunch Fresh spinach leaves (palak)
- 100 grams Processed cheese
- for deep-frying Oil
- 1/2 cup Refined flour (maida)
- to taste Salt
- to taste White pepper powder
Method
- Heat sufficient oil in a kadai.
- Blanch spinach leaves in hot water. Transfer immediately into ice cold water to refresh.
- Cut cheese into medium cubes.
- Take refined flour in a bowl. Add salt and pepper powder and mix well. Add some ice cold water and mix well to make a one string consistency batter. Set aside.
- Place spinach leaves on the worktop. Put one cheese cube on a spinach leaves and wrap it.
- Coat each fritter with the prepared batter and deep-fry in hot oil. Drain on absorbent paper.
- Double fry the fritters again in the same hot oil till golden and crisp. Drain on absorbent paper.
- Serve hot garnished with mint sprigs.
