Ingredients list for Spinach Corn Rice

  • 3/4 cup Spinach puree
  • 1/2 cup Basmati rice blanched
  • 3 cups Cooked basmati rice
  • 1 tablespoon Oil
  • 2 medium Onions diced
  • 1 medium Red capsicum 1/4 inch pieces
  • 8-10 cloves Garlic
  • 1/2 cup White sauce
  • to taste Salt
  • 2 tablespoons Sesame seeds (til) toasted

Method

  1. Place the rice in individual bowls. Heat the oil in a non stick pan. Add the onions and red capsicum and toss till they are well glazed.
  2. Transfer into a bowl. Add garlic to the pan and sauté. Add spinach puree and corn and mix. Add white sauce and salt and mix well. Simmer for two minutes.
  3. Put a few ladleful of the spinach corn mixture over the rice in each bowl. Top it up with the glazed onions and capsicum.
  4. Sprinkle toasted sesame seeds and serve immediately.
