Ingredients list for Spinach Corn Rice
- 3/4 cup Spinach puree
- 1/2 cup Basmati rice blanched
- 3 cups Cooked basmati rice
- 1 tablespoon Oil
- 2 medium Onions diced
- 1 medium Red capsicum 1/4 inch pieces
- 8-10 cloves Garlic
- 1/2 cup White sauce
- to taste Salt
- 2 tablespoons Sesame seeds (til) toasted
Method
- Place the rice in individual bowls. Heat the oil in a non stick pan. Add the onions and red capsicum and toss till they are well glazed.
- Transfer into a bowl. Add garlic to the pan and sauté. Add spinach puree and corn and mix. Add white sauce and salt and mix well. Simmer for two minutes.
- Put a few ladleful of the spinach corn mixture over the rice in each bowl. Top it up with the glazed onions and capsicum.
- Sprinkle toasted sesame seeds and serve immediately.
