Ingredients list for Spiced Eggplant Savoury
- 1 medium Eggplants
- 1 medium Onion chopped
- 3 medium Tomatoes chopped
- 5 cloves Garlic chopped
- 2-3 Green chillies chopped
- 1/4 cup Fresh coriander leaves chopped
- 1 teaspoon Lemon juice
- to taste Salt
- 1 teaspoon Oil
- 4 Brown bread slices
- 1/4 cup Fresh mint leaves chopped
Method
- Wash eggplant, prick using a fork. Roast it over direct flame or in a preheated oven until soft. Cool, then remove the outer burnt skin completely. Wash it well. Drain excess water and chop fine. Mix the eggplant with onion, tomatoes, garlic, green chillies, coriander leaves, lemon juice and salt.
- Cook this mixture in a non-stick pan with oil on medium heat until it dries well. Toast brown bread slices till crisp. Spread this mixture on the toasted bread pieces. Sprinkle mint leaves on top, cut each slice in two or four pieces. Serve warm, chilled or at room temperature.
