Ingredients
- 400 grams spaghetti, cooked
- 1 1/2 cups baked beans
- 5 tablespoons olive oil
- 8 teaspoons chopped garlic
- 2 medium onions, finely chopped
- 2 fresh oregano springs
- 2-3 fresh thyme springs
- 1 cup tomato puree
- Salt to taste
- Crushed black peppercorns to taste
- 1 1/2 teaspoons dried red chilli flakes
- 10-12 cherry tomatoes, halved
- Fresh parsley springs for garnish
- Grated parmesan cheese for garnish
Method
- Heat 2 tbsps olive oil in a non-stick pan, add 4 tsps garlic and saute till the raw smell disappears. Add onions, mix well and saute till translucent.
- Add oregano and thyme, mix and sauté for 1-2 minutes. Add tomato puree, mix well and cook for 2-3 minutes. Add baked beans, salt and crushed black peppercorns, mix well and cook for 1-2 minutes. Take the pan off the heat.
- Heat remaining olive oil in another non-stick pan, add remaining garlic and saute till the raw smell disappears. Add spaghetti, dried red chilli flakes, salt and cherry tomatoes and toss well.
- Transfer the spaghetti onto individual serving plates, top it with some baked beans, garnish with parsley sprig and grated parmesan cheese And serve hot.
