Ingredients list for Soya Aloo Tahiri Pulao

  • 2 cup Soya chunks , soaked and boiled
  • 1 large Potato (aloo) , peeled
  • 1 1/2 cups Rice , soaked for 30 minutes and drained
  • 2 tablespoons Oil
  • 10-12 Black peppercorns
  • 1 Bay leaf
  • 2 medium Tomatoes
  • to garnish Fresh coriander sprig

Method

  1. Heat oil in a non-stick pan, add peppercorns and bay leaf and sauté till fragrant.
  2. Cut potatoes into cubes, add and sauté till they turn brown.
  3. Roughly chop tomatoes.
  4. Add rice to the pan, mix and cook for 4-5 minutes. Add soya chunks and 3 cups water and stir.
  5. Add tomatoes and mix. Cover and cook for 10-15 minutes or till the rice is fully done, stirring occasionally.
  6. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
