Ingredients
- 12-16 medium prawns, shelled, de-veined
- 1 tablespoon oil
- 1 medium onion, chopped
- 1 inch piece ginger, sliced
- green chillies, roughly chopped
- fresh red chilli, cut into slivers
- 1 teaspoon lemon rind
- 6-8 fresh button mushrooms, sliced
- 3 kaffir lime leaves
- 2 one inch stalks lemon grass, roughly chopped
- 4 cups chicken stock
- Salt to taste
- ½ tablespoon fish sauce (nampla)
- 2 tablespoons fresh coriander leaves, roughly chopped
- 2 tablespoons lemon juice
Method
- Heat oil in a deep pan. Add onion, ginger, green chillies, half the fresh red chillies, lemon rind, mushrooms, kaffir lime leaves, lemon grass and chicken stock. Bring it to a boil and add salt and fish sauce (nampla).
- Add prawns and let them cook. Once they are almost done, add coriander leaves, lemon juice and stir.
- Serve hot garnished with the remaining red chilli slivers.
