Karnataka cuisine comprises of many vegetarian and non-vegetarian dishes that are full of flavour and taste. It is one of the oldest surviving cuisines and its origins can be traced back to the Iron Age. 
The varieties in Karnataka cuisine have influenced the neighbouring states like Tamil Nadu, Andhra Pradesh, Kerala and Maharashtra. The cuisine also reflects influences from these four neighbouring states on its food habits. 
Being a coastal state, coconut is grown in abundance. Needless to say coconut in its various forms like oil, milk, fresh and dried coconut is put to excellent use in its cuisine.

Ingredients for Sago Payasam Recipe

  • Sago 1/4 cup

  • Milk 2 cups

  • Sugar 3/4 cup

  • Pure ghee 6 tablespoons

  • Cashewnuts 12

  • Green cardamoms 2

  • Saffron (kesar) 1/4 gram

Method

Step 1

Clean and rub the sago pearls with a kitchen towel to remove dust. Grind the cardamom with the sugar to a fine powder, sieve and keep aside. Heat 2 tablespoons ghee and fry the cashewnuts till light brown. Heat the remaining ghee in a vessel and slightly roast the sago.

Step 2

Add ½ cup water stirring vigorously. Pour the milk and cook sago till it becomes transparent and soft. Keep stirring to avoid lumps and then add sugar and mix well till it dissolves. Continue simmering till reaches the required consistency. Add the saffron. Simmer for a few minutes more and serve garnished with fried cashewnuts.
