History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Roti Upma Recipe

  • Rotis 6

  • Tomato finely chopped 1 large

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Ginger-garlic-green chilli paste 2 tablespoons

  • Curry leaves 8-10

  • Onion finely chopped 1 large

  • Oil 4 tablespoons

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Fresh coriander leaves chopped for garnish

Method

Step 1

Grind the rotis in a grinder. Heat oil in a non-stick pan. Add mustard seeds and cumin seeds and when they crackle add ginger-garlic and chilli paste and curry leaves and saute for a minute.

Step 2

Add onions and saute till translucent. Add tomatoes and cook till it gets cooked. Add rotis, salt and lemon juice and then add coriander powder.Serve hot.
