Add ginger and carrots, mix and sauté for 1 minute. Add moong and toss. Add pickle masala and mix well. Add rice and mix well. Add salt, mix and cook for 1 minute. Switch off heat. Soften banana leaves from both sides by keeping them on open flame for a second.Place a portion of rice mixture on one side of a leaf and roll. Seal ends by inserting toothpicks at both sides. Prepare remaining packets similarly. Heat non stick pan. Place packets on it and cook for a while, flip and cook on the other side too. Open and serve hot.
