Ingredients
- 200 grams rice noodles
- 1/4 cup Ccushed roasted peanuts
- 1/4 medium green capsicum
- 2 medium tomatoes
- 1/2 medium cucumber, peeled
- 1 fresh red chilli
- 1/4 cup bean sprouts
- 1/2 teaspoon fish sauce
- 1 teaspoon vinegar
- 2 teaspoons sugar
- 1 medium onion
- A few fresh coriander leaves
Method
- Soak noodles in boiling water for a few minutes. Drain well and chill in the refrigerator.
- Slice onion thickly. Quarter tomatoes, remove pulp and seeds and cut into thin diagonal slices.
- Cut green capsicum into thin slices. Quarter cucumber, remove seeds and cut into thin diagonal strips. Cut red chilli into thin diagonal slices.
- Mix all the above in a bowl. Add bean sprouts, noodles, fish sauce, vinegar, sugar and mix well.
- Add crushed peanuts and mix. Transfer into a serving plate, garnish with coriander leaves and serve immediately.
