Ingredients for Rice Noodle Salad Recipe

  • Rice noodles 200 grams

  • Crushed roasted peanuts 1/4 cup

  • Green capsicum 1/4 medium

  • Tomatoes 2 medium

  • Cucumber peeled 1/2 medium

  • Fresh red chilli 1

  • Bean sprouts 1/4 cup

  • Fish sauce 1/2 teaspoon

  • Vinegar 1 teaspoon

  • Sugar 2 teaspoons

  • Onion 1 medium

  • Fresh coriander leaves a few


Step 1

Soak noodles in boiling water for a few minutes. Drain well and chill in the refrigerator.

Step 2

Slice onion thickly. Quarter tomatoes, remove pulp and seeds and cut into thin diagonal slices.

Step 3

Cut green capsicum into thin slices. Quarter cucumber, remove seeds and cut into thin diagonal strips. Cut red chilli into thin diagonal slices.

Step 4

Mix all the above in a bowl. Add bean sprouts, noodles, fish sauce, vinegar, sugar and mix well.

Step 5

Add crushed peanuts and mix. Transfer into a serving plate, garnish with coriander leaves and serve immediately.
