Ingredients
- 250 gms cottage cheese (paneer)
- 3 tbsps oil
- ½ tsp cumin seeds
- 2 medium onions, thickly sliced
- 2 tsps ginger paste
- 2 tsps garlic paste
- ¼ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp red chilli powder
- 2 tbsps cashewnuts paste
- ¼ cup yogurt
- 3 tbsps tomato puree
- 1 large green capsicum, cut into thick strips
- 1 large yellow capsicum, cut into thick strips
- 1 large red capsicum, cut into thick strips
- 2 medium tomatoes, cut into thick strips
- Salt to taste
- A pinch of garam masala powder
- A pinch of green cardamom powder
- 2 tbsps crumbled mawa / khoya
- 2 tbsps cream
- A few sprigs fresh coriander leaves
Method
- Heat oil in a non-stick wok, add cumin seeds and onions and saute.
- Cut cottage cheese into thick fingers.
- When onions soften, add ginger paste and garlic paste and saute for 1 minute. Add turmeric powder, coriander powder and red chilli powder, mix and saute.
- Add cashewnuts paste and mix. Add yogurt and mix. Add tomato puree and mix.
- Add green, yellow and red capsicums, tomatoes and mix. Saute for1 minute.
- Add salt, cottage cheese fingers, garam masala powder, green cardamom powder, crumbled mawa and cream and mix.
- Simmer for 2 minutes. Chop coriander leaves and add.
- Transfer into a serving bowl and serve hot.
