Ingredients for Reshmi Paneer Recipe

  • Cottage cheese (paneer) , cut into thick fingers 250 grams

  • Oil 3 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Onions , thickly sliced 2 medium

  • Ginger paste 2 teaspoons

  • Garlic paste 2 teaspoons

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Cashewnut paste 2 tablespoons

  • Yogurt 1/4 cup

  • Tomato puree 3 tablespoons

  • Green capsicum , cut into thick strips 1 large

  • Yellow capsicum , cut into thick strips 1 large

  • Red capsicum , cut into thick strips 1

  • Tomatoes , cut into thick strips 2 medium

  • Salt to taste

  • Garam masala powder a pinch

  • Green cardamom powder a pinch

  • Mawa (khoya) , crumbled 2 tablespoons

  • Fresh cream 2 tablespoons

  • Fresh coriander sprigs a few

Method

Step 1

Heat oil in a non-stick wok, add cumin seeds and when they begin to change colour, add onions, mix and saute till onions soften.

Step 2

Add ginger paste and garlic paste, mix and saute for 1 minute or till the raw smells disappear.

Step 3

Add turmeric powder, coriander powder and red chilli powder, mix and saute for 1 minute.

Step 4

Add cashewnut paste and mix. Add yogurt and mix. Add tomato puree and mix.

Step 5

Add green capsicum, yellow capsicum, red capsicums and tomatoes, mix well and saute for 1 minute.

Step 6

Add salt, cottage cheese fingers, garam masala powder, green cardamom powder, crumbled mawa and cream, mix gently and simmer for 2 minutes. Chop coriander leaves and add and mix well gently.

Step 7

Transfer into a serving bowl and serve hot.
