Ingredients list for Reshmi Paneer

  • 250 grams Cottage cheese (paneer) , cut into thick fingers
  • 3 tablespoons Oil
  • 1/2 teaspoon Cumin seeds
  • 2 medium Onions , thickly sliced
  • 2 teaspoons Ginger paste
  • 2 teaspoons Garlic paste
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Red chilli powder
  • 2 tablespoons Cashewnut paste
  • 1/4 cup Yogurt
  • 3 tablespoons Tomato puree
  • 1 large Green capsicum , cut into thick strips
  • 1 large Yellow capsicum , cut into thick strips
  • 1 Red capsicum , cut into thick strips
  • 2 medium Tomatoes , cut into thick strips
  • to taste Salt
  • a pinch Garam masala powder
  • a pinch Green cardamom powder
  • 2 tablespoons Mawa (khoya) , crumbled
  • 2 tablespoons Fresh cream
  • a few Fresh coriander sprigs

Method

  1. Heat oil in a non-stick wok, add cumin seeds and when they begin to change colour, add onions, mix and saute till onions soften.
  2. Add ginger paste and garlic paste, mix and saute for 1 minute or till the raw smells disappear.
  3. Add turmeric powder, coriander powder and red chilli powder, mix and saute for 1 minute.
  4. Add cashewnut paste and mix. Add yogurt and mix. Add tomato puree and mix.
  5. Add green capsicum, yellow capsicum, red capsicums and tomatoes, mix well and saute for 1 minute.
  6. Add salt, cottage cheese fingers, garam masala powder, green cardamom powder, crumbled mawa and cream, mix gently and simmer for 2 minutes. Chop coriander leaves and add and mix well gently.
  7. Transfer into a serving bowl and serve hot.
