This recipe is from FoodFood TV channel By Sanjeev Kapoor 18 Nov 2014 in Recipes Course New Update Main Ingredients Red Pumpkin, Crushed Peppercorns Cuisine Indian Course Snacks and Starters Prep Time 21-25 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Red Pumpkin Crushed Pepper 500 grams Red Pumpkin peeled, cut into fingers and pricked 1 1/2 teaspoons Crushed Peppercorns 5 tablespoons Oil 12-15 Garlic cloves to taste Salt Juice of 1 lemon 1 cup Fresh coriander leaves roughly chopped 3 tablespoons Vinegar 1 teaspoon Mustard paste Method Heat 2 tbsps oil in a non-stick pan. Mash the garlic cloves and add to the pan and sauté till the garlic becomes golden and crisp. Add red pumpkin, 1 tsp crushed black peppercorns, salt, lemon juice and mix well. Cover and cook for 5-7 minutes or till the pumpkin is cooked. To make the dressing, grind together coriander leaves, remaining crushed black peppercorns, vinegar, mustard paste, salt and remaining oil. Arrange the pumpkin fingers on a serving plate.
