Ingredients list for Rack Of Lamb With Apple Sauce
- 450 grams Rack of lamb
- Green apples
- 1/2 teaspoon Black peppercorns, crushed
- 3 tablespoons Olive oil
- a few Lettuce leaves
- 3 medium Green apples, chopped
- 1 teaspoon Cumin seeds
- 1 medium Onion , roughly chopped
- 1 tablespoon Sugar
- 1 tablespoon White wine
- a pinch Turmeric powder
- 1/2 teaspoon Red chillies, crushed
- 1/4 teaspoon Red chilli powder
- 5-6 Lettuce leaves, hand torn
Method
- Preheat oven to 180C or 375F. Rub in a little salt and freshly crushed black peppercorns on the rack of lamb.
- Place it in an ovenproof dish and dribble two tablespoons olive oil over it.
- Place the dish in the oven and let it cook for around forty-five minutes to one hour.

- When they begin to change colour, add onions and sauté till light brown.
- Add green apples and sugar. Let the sugar caramalize a bit then add white wine and mix.
- Cook till apples are cooked and tender.
- Add salt and a pinch of turmeric powder. Mix and add crushed red chillies and red chilli powder.
- Cook till apples are completely soft.
- Set aside to cool. Blend it in a blender and strain.
- Take the strained mixture in a pan and heat till it comes to a boil.
- Remove the cooked rack of lamb and place it in a serving plate.
- Pour the apple sauce over and serve garnished with lettuce leaves torn with hand.
