Ingredients list for Pumpkin Seed Cookies
- ¾ cup Pumpkin seeds
- 2 cups Refined flour (maida)
- ½ cup Unsweetened cocoa powder
- ½ teaspoon Baking powder
- ½ teaspoon Cinnamon powder
- ½ teaspoon Paprika smoked
- ¾ cup brown sugar/jaggery
- 1 cup Castor sugar (caster sugar)
- 1 cup + 2 tablespoons Butter
- 2 Eggs
- ½ cup Chocolate chips
Method
- Preheat oven to 180º C. Line a baking tray with parchment paper.
- Dry roast pumpkin seeds till golden. Set aside to cool.
- Sift together flour, cocoa powder, baking powder, cinnamon powder and paprika into a bowl and mix well.
- Cream together brown sugar, castor sugar and butter in another bowl till fluffy.
- Add eggs, one at a time, and beat again. Add the flour mixture, gradually, and fold in well.
- Add chocolate chips and roasted pumpkin seeds and mix well.
- Divide the mixture into 12 equal portions and place on the lined tray, keeping some gap in between.
- Place the tray in the preheated oven and bake for 12-15 minutes. Remove from heat and cool.
- Serve or store in an air tight container.
