Ingredients
- 12-16 prawns shelled, deveined with tails intact
- 1 cup refined flour + for dusting
- ¼ cup cornflour
- ½ cup rice flour
- ½ teaspoon baking soda
- Salt to taste
- Oil to deep fry
Method
- Take refined flour in a bowl, add cornflour, rice flour, baking powder and salt, mix lightly. Add ¼ cup cold water and mix well to form a thin and lump free batter.
- Heat sufficient oil in a deep pan. Dip the prawns in the tempura batter till they are evenly coated, slide into hot oil and deep-fry till light golden and crisp. Drain on absorbent paper.
- Arrange them on a serving platter and serve hot with sweet chilli sauce.
