Prawn Tempura

A traditional Japanese dish wherein seafood or vegetables are batter fried to a crispy perfection. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 12-16 prawns shelled, deveined with tails intact
  • 1 cup refined flour + for dusting 
  • ¼ cup cornflour
  • ½ cup rice flour
  • ½ teaspoon baking soda
  • Salt to taste 
  • Oil to deep fry 

Method

  1. Take refined flour in a bowl, add cornflour, rice flour, baking powder and salt, mix lightly. Add ¼ cup cold water and mix well to form a thin and lump free batter.
  2. Heat sufficient oil in a deep pan. Dip the prawns in the tempura batter till they are evenly coated, slide into hot oil and deep-fry till light golden and crisp. Drain on absorbent paper.
  3. Arrange them on a serving platter and serve hot with sweet chilli sauce.
