How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Pokhal Bhaat Recipe

  • Cooked Rice 2 cups

  • Strained rice water in which rice was cooked 3 cups

  • Oil 1 tablespoon

  • Dried red chillies 4-5

  • Green chillies 4

  • Rock salt to taste

  • For garnishing

  • Salted peanuts

  • 1 small onion finely chopped

  • Juice of ¼ lemon

  • Black salt

  • A lemon wedge


Step 1

Place boiled rice in a bowl and mash it with a spoon. Add strained rice water and mash further. Mix well and set aside overnight.

Step 2

Heat oil in a non-stick pan, add dried red chillies and sauté till crisp.  Switch off the heat, drain the chillies on absorbent paper.

Step 3

Break green chillies and place in a mortar, add rock salt and pound with a pestle.

Step 4

For serving, place mashed rice in a bowl. Top it with peanuts, onion, lemon juice, pounded green chillies, black salt, a lemon wedge. Crush red chillies and sprinkle on top and serve.
