Ingredients list for Pokhal Bhaat

  • 2 cups Cooked Rice
  • 3 cups Strained rice water in which rice was cooked
  • 1 tablespoon Oil
  • 4-5 Dried red chillies
  • 4 Green chillies
  • to taste Rock salt
  • For garnishing
  • Salted peanuts
  • 1 small onion finely chopped
  • Juice of ¼ lemon
  • Black salt
  • A lemon wedge

Method

  1. Place boiled rice in a bowl and mash it with a spoon. Add strained rice water and mash further. Mix well and set aside overnight.
  2. Heat oil in a non-stick pan, add dried red chillies and sauté till crisp.  Switch off the heat, drain the chillies on absorbent paper.
  3. Break green chillies and place in a mortar, add rock salt and pound with a pestle.
  4. For serving, place mashed rice in a bowl. Top it with peanuts, onion, lemon juice, pounded green chillies, black salt, a lemon wedge. Crush red chillies and sprinkle on top and serve.
