Ingredients list for Plum Shortcake
- 5-6 Plums chopped
- 225 grams Refined Flour
- 2 teaspoons Baking powder
- 5 Eggs
- 1 teaspoon Vanilla essence
- 1 cup Sugar
- 200 grams Butter
- few to garnish Plum slices
- to garnish Icing sugar
Method
- Preheat oven to 180°C. Sieve together refined flour and baking powder into a bowl.
- Whisk together eggs and vanilla essence in another bowl for 1-2 minutes. Add sugar, little by little, and whisk for 5-7 minutes or till fluffy.
- Add butter and whisk further for 2-3 minutes. Add plums and flour and mix using cut and fold method.
- Pour the mixture into a greased cake tin and bake in the preheated oven for 25-30 minutes. Remove from the cake tin, garnish with fresh plum slices, dust some icing sugar and serve.
