Ingredients
- 20 grams fresh yeast
- 1 teaspoon sugar
- 2 teaspoons salt
- 1½ cups refined flour + for dusting
- 1 tablespoon olive oil + for greasing
- ¼ cup pizza sauce
- ½ cup grated mozzarella cheese
- ¼ cup sweet corn, boiled
- 4-5 button mushrooms, chopped
- ¼ cup finely chopped mixed capsicums
- 1 pickled jalapeno, chopped
- Dried oregano for sprinkling
- Red chilli flakes for sprinkling
Method
- Place the yeast in a big bowl. Add the sugar, 1 teaspoon salt and 2-3 tablespoons of warm water and set aside for 10-15 minutes.
- Add flour, olive oil and remaining salt to the activated yeast and mix well. Add sufficient water and knead into soft dough. Cover with a wet muslin cloth and set aside for 15-20 minutes in a warm place.
- Preheat the oven to 200°C. Grease a baking tray with oil.
- Dust some flour on the work table, place the dough over it and roll it into a thin rectangular sheet.
- Apply pizza sauce and sprinkle mozzarella cheese. Add corn, mushrooms, mixed capsicums, jalapeno. Sprinkle dried oregano and chilli flakes.
- Roll tightly and cut into thick slices.
- Place the slices on a baking tray keeping some distance between each and bake for 10-15 minutes. Remove and let them cool. Wrap and pack it in the tiffin.
