Pizza Roll Ups

Ingredients

  • 20 grams fresh yeast
  • 1 teaspoon sugar
  • 2 teaspoons salt
  • 1½ cups refined flour + for dusting
  • 1 tablespoon olive oil + for greasing
  • ¼ cup pizza sauce
  • ½ cup grated mozzarella cheese
  • ¼ cup sweet corn, boiled
  • 4-5 button mushrooms, chopped
  • ¼ cup finely chopped mixed capsicums
  • 1 pickled jalapeno, chopped
  • Dried oregano for sprinkling
  • Red chilli flakes for sprinkling

Method

  1. Place the yeast in a big bowl. Add the sugar, 1 teaspoon salt and 2-3 tablespoons of warm water and set aside for 10-15 minutes.
  2. Add flour, olive oil and remaining salt to the activated yeast and mix well. Add sufficient water and knead into soft dough.  Cover with a wet muslin cloth and set aside for 15-20 minutes in a warm place. 
  3. Preheat the oven to 200°C. Grease a baking tray with oil.
  4. Dust some flour on the work table, place the dough over it and roll it into a thin rectangular sheet.
  5. Apply pizza sauce and sprinkle mozzarella cheese. Add corn, mushrooms, mixed capsicums, jalapeno. Sprinkle dried oregano and chilli flakes.
  6. Roll tightly and cut into thick slices. 
  7. Place the slices on a baking tray keeping some distance between each and bake for 10-15 minutes. Remove and let them cool. Wrap and pack it in the tiffin.
