How to make Pista Barfi -

Barfi or burfi is a dense milk based sweet confectionery. The name is a derivative of the Persian word barf, which means snow. Try out this pista snowy delight.

History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pista Barfi Recipe

  • Pistachio powder 2 cups

  • Ghee 1 1/2 tabl to grease

  • Sugar 3/4 cup

  • Milk 1/2 tablespoon

  • Liquid glucose 2 tablespoons

  • Silver warq to garnish


Step 1

Grease a barfi tray with some ghee.

Step 2

Heat sugar with ¼ cup water in a non-stick pan, stirring till the sugar dissolves.

Step 3

Add milk, stir and discard the scum that rises to the surface. Cook till the syrup thickens slightly.

Step 4

Add liquid glucose and mix till well combined. Add ghee and mix well.

Step 5

Add pistachio powder, mix well till the mixture comes together to form a lump. Transfer the mixture into a bowl and let it cool slightly. Apply ghee on your palms and knead the mixture slightly.

Step 6

Spread this mixture on the barfi tray and spread evenly. Apply some ghee on a rolling pin and roll on the surface to make it even.

Step 7

Garnish with silver varq and let it set at room temperature.

Step 8

Cut into diamonds, arrange them on a serving platter and serve.
