By Sanjeev Kapoor 24 Nov 2014 in Recipes Course New Update Main Ingredients Pineapple, Boneless Chicken Breasts Cuisine Fusion Course Snacks and Starters Prep Time 26-30 minutes Cook time 26-30 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Non Veg Ingredients list for Pineapple Chicken 1/2 measures Pineapple cubed cooked with sugar 2 Boneless Chicken Breasts cubed to taste Salt 3 tablespoons Cornflour/ corn starch 2 teaspoons Soy sauce 1 tablespoon Oil 5 cloves Garlic chopped 1/2 inch piece Ginger chopped 2 Spring onion ¾ inch pieces 1 medium Red capsicum 1 1/2 inch strips 1 medium Green capsicum cut into 1/2 cm wide long stripes 2 1/2 medium Crushed red chillies 1/2 cup Chicken stock 1 tablespoon Spring onion greens chopped Method Place the chicken pieces in a bowl, add salt, two tablespoons cornflour and one teaspoon soy sauce. Mix well. Heat the oil in a non-stick pan. Add the chicken pieces and sauté till light brown. Add the garlic and ginger. Toss well. Add the spring onions, red capsicum, green capsicum, salt and pineapple pieces. Mix well and cook for two minutes. Add the remaining soy sauce, crushed red chillies, chicken stock and remaining cornflour dissolved in quarter cup of water. Stir to mix and simmer for one to two minutes.
