Ingredients list for Pesto Mushrooms

  • 16-20 large Button mushrooms stems removed
  • 1/2 cup Basil leaves
  • 5-6 cloves Garlic
  • 1/4 cup Pine nuts(chilgoza)
  • to taste Salt
  • 5-6 Black peppercorns
  • 25 grams for garnish Parmesan cheese
  • 1/4 cup Fresh cream
  • 1 medium Red capsicum

  1. Halve mushrooms. Heat 2 tbsps extra virgin olive oil in a non stick pan, add mushrooms and cook, tossing them occasionally for even cooking.
  2. To make the pesto, grind together basil leaves, garlic, pine nuts, salt, peppercorns, parmesan cheese and 4 tbsps extra virgin olive oil to a smooth paste.
  3. Add fresh cream to the mushrooms and cook. Chop red capsicum into ¼ inch pieces. Add pesto to the mushrooms and mix. Adjust salt. Add red capsicum and mix. Serve hot garnished with a few slices of Parmesan cheese.
