Ingredients list for Penne With Creamy Pesto And Cherry Tomatoes
- 200 grams Penne pasta boiled
- 2 tablespoons Basil leaves
- 20 Cherry tomatoes
- 3 1/2 tablespoons Extra virgin olive oil
- to taste Salt
- 5-6 Black peppercorns crushed
- Pesto sauce
- 3/4 cup Basil leaves
- 6 cloves Garlic
- 3 tablespoons Pine nuts(chilgoza)
- 3/4 cup Parmesan cheese crumbled
Method
- For the pesto sauce grind together basil leaves, four garlic cloves, pinenuts, two and a half tablespoons of olive oil and most of the Parmesan cheese till smooth. Slice the remaining garlic cloves. Heat the remaining olive oil in a non-stick pan. Add the garlic and sauté till golden. Add cherry tomatoes and sauté for two to three minutes, pressing the tomatoes a little with the back of the ladle.
- Add the pasta and toss for two minutes. Add the pesto sauce and toss for two minutes. Add the cream, salt and crushed peppercorns and toss. Cook for a minute.
- Serve hot garnished with the remaining Parmesan cheese.
