Ingredients
- 1 cup penne (tubular Pasta)
- Salt to taste
- 1 tablespoon oil
- 1 medium carrot, peeled and cut into 1 inch pieces
- 1/4 small broccoli, cut into florets
- 3-4 French beans, cut into 1 inch pieces
- 1/2 medium green capsicum, cut into 1 inch pieces
- 1 medium onion, quartered and layers separated
- 10-12 Cherry tomatoes
- 4-5 Stuffed olives
- 1/2 cup Thousand island dressing
Method
- Take sufficient water in a pan, add a little salt and bring it to a boil.
Add penne pasta and cook for six to eight minutes on high heat or until almost cooked. - Drain, remove and refresh penne with cold water.
Spread on a plate with one tablespoon of oil. - Heat sufficient water in a pan, add carrot, broccoli and french beans.
Cook on medium heat for three to four minutes. - Remove and refresh with cold water and drain of excess moisture.
In a large salad bowl toss all the prepared vegetables along with pasta, cherry tomatoes and stuffed olives. - Add Thousand Island dressing, lightly toss and serve cold.
