Penne In Thousand Island

A colorful and refreshing pasta salad with penne, mixed vegetables, cherry tomatoes, olives, and Thousand Island dressing. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup penne (tubular Pasta)
  • Salt to taste
  • 1 tablespoon oil
  • 1 medium carrot, peeled and cut into 1 inch pieces
  • 1/4 small broccoli, cut into florets
  • 3-4 French beans, cut into 1 inch pieces
  • 1/2 medium green capsicum, cut into 1 inch pieces
  • 1 medium onion, quartered and layers separated
  • 10-12 Cherry tomatoes
  • 4-5 Stuffed olives
  • 1/2 cup Thousand island dressing

Method

  1. Take sufficient water in a pan, add a little salt and bring it to a boil.
    Add penne pasta and cook for six to eight minutes on high heat or until almost cooked.
  2. Drain, remove and refresh penne with cold water.
    Spread on a plate with one tablespoon of oil.
  3. Heat sufficient water in a pan, add carrot, broccoli and french beans.
    Cook on medium heat for three to four minutes.
  4. Remove and refresh with cold water and drain of excess moisture.
    In a large salad bowl toss all the prepared vegetables along with pasta, cherry tomatoes and stuffed olives.
  5. Add Thousand Island dressing, lightly toss and serve cold.
