Ingredients
- 2 cups penne pasta, boiled
- 250 grams boneless chicken, grilled and shredded
- 3 medium tomatoes, quartered
- 1 medium red capsicum, roughly chopped
- 1 spring onion bulb
- 3 garlic cloves
- ¼ cup fresh parsley
- ¼ cup olive oil
- Salt to taste
- Crushed black peppercorns to taste
Method
- To make sofrito, finely chop together tomatoes, bell pepper, spring onion, garlic and parsley with olive oil in a food processor.
- Heat a non-stick pan. Add the chopped ingredients and sauté till the oil separates.
- Add chicken, pasta, salt and crushed peppercorns and mix well.
- Sprinkle parmesan cheese on top and serve hot garnished with parsley sprig.
