Ingredients list for Pasta Sofrito with Chicken
- 2 cups Pasta Penne, boiled
- 250 grams Boneless chicken grilled and shredded
- 3 medium Tomatoes quartered
- 1 medium Red capsicum roughly chopped
- 1 Spring onion grated
- 3 Garlic cloves
- ¼ cup Fresh parsley
- ¼ cup Olive oil
- Salt to taste
- Crushed black peppercorns to taste
Method
- To make sofrito, finely chop together tomatoes, bell pepper, spring onion, garlic and parsley with olive oil in a food processor.
- Heat a non-stick pan. Add the chopped ingredients and sauté till the oil separates.
- Add chicken, pasta, salt and crushed peppercorns and mix well.
- Sprinkle parmesan cheese on top and serve hot garnished with parsley sprig.
