Ingredients 

  • 2 cups penne pasta, boiled
  • 250 grams boneless chicken, grilled and shredded
  • 3 medium tomatoes, quartered
  • 1 medium red capsicum, roughly chopped
  • 1 spring onion bulb
  • 3 garlic cloves
  • ¼ cup fresh parsley
  • ¼ cup olive oil
  • Salt to taste
  • Crushed black peppercorns to taste

Method

  1. To make sofrito, finely chop together tomatoes, bell pepper, spring onion, garlic and parsley with olive oil in a food processor.
  2. Heat a non-stick pan. Add the chopped ingredients and sauté till the oil separates.
  3. Add chicken, pasta, salt and crushed peppercorns and mix well.
  4. Sprinkle parmesan cheese on top and serve hot garnished with parsley sprig.
