Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Pasta Prima Vera Recipe

  • Penne boiled 200 grams

  • Fresh cream 2 tablespoons

  • Yellow Zucchini 1/2

  • Green zucchini 1/2

  • Asparagus 5-6

  • Broccoli 7-8 florets

  • Tomatoes,blanched 2-3

  • Extra virgin olive oil 5 tablespoons

  • Garlic 4-5 cloves

  • Salt to taste

  • Pine nuts(chilgoza) 2 tablespoons

  • Parmesan cheese shavings a few

  • Fresh basil leaves 5-6

Method

Step 1

Cut yellow and green zucchini into ¼ inch pieces. Cut the soft tips of asparagus for use and blanch broccoli florets. Halve blanched tomatoes, remove seeds and chop. Heat 2 non stick pans and pour 2 tbsps extra virgin olive oil in each. Crush garlic and add to one pan and sauté for ½ minute.

Step 2

Add pasta and toss. Add both the zucchini, asparagus, tomatoes and a little salt to the other pan and toss. Add pine nuts and salt to the pasta and toss. Add broccoli to the vegetables in the other pan and toss. Switch off the heat. Add cream and parmesan cheese to the pasta and mix well.

Step 3

Switch off the heat. Transfer the pasta onto a serving plate, put the vegetables over it and garnish with basil leaves. Drizzle remaining olive oil over and serve hot.
