History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Papdi Recipe

  • Refined flour 2 cups

  • Salt to taste

  • Cumin seeds 1 teaspoon

  • Ghee 2 tablespoons

  • Oil to deep fry

Method

Step 1

Take refined flour in a bowl, add salt and cumin seeds and mix well. Add ghee and mix. Add sufficient water and knead into a semi-stiff dough.

Step 2

Spread some oil on the work top and roll out the dough into a thin disc. Dork with a fork. Cut out small discs with a cookie cutter.

Step 3

Heat sufficient oil in a kadai, slide in the discs and deep-fry till golden brown. Drain on absorbent paper.

Step 4

Cool and use in making a chaat of your choice. Or store in an air tight container.
