Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak with prawns Recipe

  • Spinach chopped 2 medium

  • Prawns (kolambi/jhinga) peeled and deveined 16 large

  • Oil 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 1 teaspoon

  • Cumin powder 1/2 teaspoon

  • Green chilli chopped 2-3

  • Salt to taste

Method

Step 1

Marinate the prawns with salt and set aside.

Step 2

Heat oil in a non-stick pan. Add cumin seeds and saute for a minute. Add prawns and saute for two to three minutes.

Step 3

Add spinach, turmeric powder, coriander powder, cumin powder , green chillies and salt and cover and cook on low flame or till the water dries up.

Step 4

Remove the lid and cook further for two minutes.Serve hot.
