Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Over Loaded Potato Skins Recipe

  • Potatoes boiled 4 medium

  • Oil 1 tablespoon

  • Bacon strips, chopped 10-12

  • Crushed black peppercorns to taste

  • Salt a pinch

  • Fresh thyme ½ teaspoon

  • Spring onion greens finely chopped ¼ cup + for garnishing

  • Processed cheese grated as required

Method

Step 1

Halve the boiled potatoes horizontally, scoop out the flesh and reserve it along with the shells.

Step 2

Preheat oven to 180º C.

Step 3

Heat oil in a non-stick pan. Add bacon and sauté for 2-3 minutes. Add potato flesh, mash lightly and cook for 1-2 minutes.

Step 4

Add crushed peppercorns and salt and mix. Add thyme and spring onion greens and mix well.

Step 5

Fill the potato shells with bacon mixture and place them on the baking tray. Put some cheese on top of stuffed shells.

Step 6

Place the baking tray in the preheated oven and bake till cheese melts.

Step 7

Serve hot garnished with spring onion greens.
