Ingredients list for Over Loaded Potato Skins
- 4 medium Potatoes boiled
- 1 tablespoon Oil
- 10-12 Bacon strips, chopped
- to taste Crushed black peppercorns
- a pinch Salt
- ½ teaspoon Fresh thyme
- ¼ cup + for garnishing Spring onion greens finely chopped
- as required Processed cheese grated
Method
- Halve the boiled potatoes horizontally, scoop out the flesh and reserve it along with the shells.
- Preheat oven to 180º C.
- Heat oil in a non-stick pan. Add bacon and sauté for 2-3 minutes. Add potato flesh, mash lightly and cook for 1-2 minutes.
- Add crushed peppercorns and salt and mix. Add thyme and spring onion greens and mix well.
- Fill the potato shells with bacon mixture and place them on the baking tray. Put some cheese on top of stuffed shells.
- Place the baking tray in the preheated oven and bake till cheese melts.
- Serve hot garnished with spring onion greens.
