Ingredients
- 2 small cauliflower, cut into 1 inch cubes
- 1/2 cup broccoli florets
- 5-6 French beans, cut into 1 inch diamonds
- 5-6 snow peas
- 1/2 medium zucchini , cut into 1 inch cubes
- 5-6 asparagus
- 1 small red capsicum, cut into 1 inch pieces
- 1 small yellow capsicum, cut into 1 inch pieces
- 1 small green capsicum, cut into 1 inch pieces
- 5-6 baby potatoes
- 1 tablespoon olive oil
- 1/2 inch ginger piece, cut into thin strips
- 1 tablespoon cornflour/ corn starch
- 1 1/2 cups orange juice
- Sea salt to taste
- 1/2 tablespoon crushed red chillies
Method
- Heat olive oil in a deep pan. Add ginger and sauté on high heat. Add carrots and cauliflower and cook for two minutes.
- Blend cornstarch in orange juice. Add broccoli and French beans to the pan of vegetables. Stir and cook for a minute.
- Add snowpeas, zucchini, squash and mix. Add sea salt, crushed red chillies and mix. Add asparagus, red, yellow and green capsicums and boiled baby potatoes and mix well. Add orange marmalade and mix. Add cornstarch blended in orange juice and mix.
- Cook for two to three minutes taking care that the vegetables do not get overcooked and lose their crunchiness.
- Serve hot with boiled brown rice.
