Ingredients list for One Pot Creamy Mushroom Chicken
- 400 grams Boneless chicken breast cut into thin slices
- 1 cup Fresh cream
- 16-18 Button mushrooms thickly sliced
- to taste Salt
- Fresh thyme chopped
- to taste Crushed black peppercorns
- Olive oil
- 6-8 Garlic cloves finely chopped
- 1 medium Onion finely chopped
- Chicken stock
- ½ cup Cheddar cheese grated
Method
- Put chicken in a bowl, add salt, thyme and crushed peppercorns. Mix well and set aside for ten to fifteen minutes to marinate.
- Heat olive oil in a non-stick pan, add marinated chicken and cook, turning sides, till both sides are golden. Drain on absorbent paper.
- Add garlic in the same pan and sauté for thirty seconds. Add onion and sauté till golden.
- Add mushrooms, mix and sauté for two to three minutes. Add chicken stock and stir well.
- Add cream, mix well and bring to a boil. Add chicken, mix well and cook for two to three minutes.
- Add cheese and mix well. Adjust the seasoning.
- Serve hot.
