The cuisine of Uttar Pradesh is synonymous with a wide variety as every city in this state offers a different but equally sumptuous cuisine for the gourmet. Most families in Uttar Pradesh eat vegetarian food, although meat delicacies cooked in the Awadh style are world famous. Average cuisines in Uttar Pradesh revolve around the simple, vegetable curries of all kinds. But there is a predominance of fried foods which are a must especially during festivals and special occasions. 
The irresistible Mughlai food is reminiscent of the Nawabi and the Mughal glory. The world renowned Dum Pukht (means ‘to breathe and to cook’) cuisine owes its excellence to the fact that the food, sealed in a dish and slow-cooked in its own juices, retains its entire natural aromas and flavours. Lucknow is famous for its biryanis and different meat preparations. A very interesting aspect of Awadh cuisine is the inspiration it draws from a myriad sources - seasons and celebrations, flora and fauna, personalities, poetry and colour.

Ingredients for Navratan Rabri Recipe

  • Milk 6 cup

  • Saffron 1/4 teaspoon

  • Sugar 5 tablespoons

  • Green cardamoms 2

  • Almonds,chopped 10

  • Cashewnuts chopped 10

  • Pistachios chopped 10

  • Raisins 10

  • Apple chopped 1 small

  • Grapes 10-15

  • Orange 5 segments

  • Pineapple chopped 3 slices

  • Glazed cherries chopped 10

Method

Step 1

Boil milk in a wide based pan on low heat, stirring frequently. Remove the skin that forms on the surface towards the sides of the pan.

Step 2

Remove one teaspoon of hot milk from the pan and add saffron, mix well and add this to the hot milk. When milk reduces to half the original quantity, add sugar, green cardamoms and dry fruits.

Step 3

Stir and cook for two minutes. Remove from heat and cool to room temperature. Mix all the fruits and add it to the rabri and mix well.

Step 4

Pour into a serving bowl, garnish with cherries and place in a refrigerator to chill. Serve chilled.
