Ingredients list for Mustard Paneer with Spinach and Sweet Potatoes
- 250 grams Cottage Cheese
- 2 tablespoons Mustard Paste
- 1 medium bunch Spinach blanched
- 200 grams Sweet potatoes boiled and peeled
- Olive oil 1 tablespoon + 2 teaspoon
- 1 medium Onion finely chopped
- 1 tablespoon Crushed garlic
- 1/2 cup Fresh cream
- to taste Salt
- to taste Crushed black peppercorns
- for garnishing Fried shredded spinach leaves
Method
- Cut cottage cheese into half inch thick slices.
- Put mustard paste in a bowl, add cottage cheese slices and mix till the cottage cheese pieces are well coated. Set aside to marinate for 10 minutes.
- Heat 1 tbsp olive oil in a non-stick pan, add onion and garlic and sauté till lightly browned.
- Finely chop blanched spinach and add to the pan.
- Cut sweet potato into ¼ inch pieces and add to the pan. Add fresh cream, salt and crushed peppercorns and mix well. Add 2-3 tbsps water and mix well.
- Heat 2 tsps olive oil in a non-stick grill pan. Place marinated cottage cheese slices on it and grill till grill marks appear on them.
- Transfer the prepared spinach-sweet potato mixture onto a serving plate, top with the grilled cottage cheese slices, garnish with fried spinach leaves and serve immediately.
