Ingredients list for Mustard Paneer with Spinach and Sweet Potatoes

  • 250 grams Cottage Cheese
  • 2 tablespoons Mustard Paste
  • 1 medium bunch Spinach blanched
  • 200 grams Sweet potatoes boiled and peeled
  • Olive oil 1 tablespoon + 2 teaspoon
  • 1 medium Onion finely chopped
  • 1 tablespoon Crushed garlic
  • 1/2 cup Fresh cream
  • to taste Salt
  • to taste Crushed black peppercorns
  • for garnishing Fried shredded spinach leaves

Method

  1. Cut cottage cheese into half inch thick slices.
  2. Put mustard paste in a bowl, add cottage cheese slices and mix till the cottage cheese pieces are well coated. Set aside to marinate for 10 minutes.
  3. Heat 1 tbsp olive oil in a non-stick pan, add onion and garlic and sauté till lightly browned.
  4. Finely chop blanched spinach and add to the pan.
  5. Cut sweet potato into ¼ inch pieces and add to the pan. Add fresh cream, salt and crushed peppercorns and mix well. Add 2-3 tbsps water and mix well.
  6. Heat 2 tsps olive oil in a non-stick grill pan. Place marinated cottage cheese slices on it and grill till grill marks appear on them.
  7. Transfer the prepared spinach-sweet potato mixture onto a serving plate, top with the grilled cottage cheese slices, garnish with fried spinach leaves and serve immediately.
