Ingredients list for Mozzarella Chicken with Marinara Sauce - SK Khazan
- 2 Boneless chicken breasts
- 4 Mozzarella cheese slices
- 1/2 cup Marinara sauce
- as required Fresh spinach leaves
- 3 tablespoons Olive oil
- 1 1/2 teaspoons Dried mixed herbs
- to taste Salt
- as required Black peppercorns crushed
- 3/4 teaspoon Red chilli flakes
- to garnish Carrot strips
Method
- Slit the chicken breasts horizontally without cutting through. Spread them out, keep them between two butter papers and flatten it out with a rolling pin. Discard the butter paper and place the chicken breasts on the worktop.
- Place 5-6 spinach leaves and 2 cheese slices over each flattened chicken breast, place it over cling paper and roll tightly with the cling wrap. Twist the two ends of the wrap and refrigerate for 2 hours.
- Boil sufficient water in a deep non-stick pan. Add cling wrapped chicken rolls and cook for 4-5 minutes. Remove from heat, discard the cling wrap and set aside.
- Heat olive oil in a non-stick pan. Add marinara sauce, mixed herbs, salt, crushed peppercorns and chilli flakes, mix well and cook for a few seconds. Remove from heat and set aside.
- Cut the chicken into roundels and arrange on a serving platter. Top with the prepared sauce.
- Garnish with carrot strips and serve immediately.
